Driving up to Nambucca Heads last Wednesday we stopped at a Service Centre at Taree in the Manning Valley to refresh and refuel. My wife set to yesterday and turned out a batch of Lamington cakes, an Ozzie delicacy made by separating two slab cakes with a delicious chocolate filling, cutting them into squares and dipping them into chocolate icing before rolling them in dessicated coconut.
